My Goodness Bowl Recipe

“Bowls” are all the craze right now. I hear about breakfast bowls, protein bowls, raw bowls. I wanted to create my own bowl that was packed with lots of good stuff so I decided to create a Goodness Bowl for myself. You don’t need a lot of ingredients and in the end you are left with a delicious and healthy bowl chock full of nutrients. Let’s get started!

First you need to make sure that you have a cute helper! Check!

You will need: Quinoa, spinach, ruby red potatoes, snap peas, red peppers and salmon.
Of course you can add anything you like but I enjoy this combination.

Clean off all of your vegetables.

Chop up your potatoes into quarters and sprinkle with olive oil, salt and pepper
and bake for 45 minutes in the oven at 350 degrees.

Your Salmon should then be brushed with butter and seasoned with salt and pepper and put in the oven when there is 20 minutes left on the potatoes.

When you have 12-15 minutes left on your potatoes and salmon, start your quinoa and sauteing your red peppers and snap peas.

When you have 5 minutes left on your vegetables, pop in 2 heaping handfuls of spinach. Mix in with your veg.

Take out your potatoes and salmon and mix your fluffed quinoa,
veg and potatoes in a big bowl.

Finally, put your mixed ingredients into a bowl and top with your chunks of salmon.
You can add a sweet chili sauce to the top which is what I do, or you could add soya sauce. The possibilities are endless!

Voila! A delicious and nutritious meal that tastes even better the next day cold or hot. I usually make a double batch so my husband and I can eat it over the course of a couple days.
