A Simple Summer Salad

I really wish I was more handy in the kitchen. My husband is a Chef by trade but I wouldn’t even call myself a decent prep cook! I am slowly trying to learn tricks in the kitchen and I am really trying to learn some new things and create meals for myself and Isla instead of relying on Dana so much. When I’m cooking its usually pretty basic; Salmon, rice and some sort of vegetable. Usually with very little seasoning but I am learning.

I love making and eating Mexican inspired food. The tastes are my favourite! I always make a delicious Taco Salad so this Simple Summer Salad is inspired by that.
Here’s what you will need:
For the Dressing
2 tbsp of Canola oil
The Juice of 2 limes (approx. 2 tbsp)
2 tsp of honey
1 small jalapeño, finely chopped
For the Salad
1 can of black beans. The 540 ml will do. Make sure they are drained and rinsed well.
1 package of spinach and/or salad mixture
1 tomato cut and diced
1 can of corn kernels
1 cubed avocado
1 cup of crushed tortilla chips (optional)

Whisk lime juice, oil, honey and jalapeño in a bowl.

Put washed spinach in a bowl.

Add tomatoes, avocado, corn and black beans.

Mix all the ingredients together, add tortilla chips if you wish and dig in! There is so much flavour. Sweet and tangy with a great crunch! Add some sauteed shrimp if you are feeling extra adventurous!
