I’m really not that great in the kitchen. I really wish I was but I am not. I try to cook some things and I am always trying to learn some type of skill from my chef husband. I do like making snacks in the kitchen though with Isla and making something that’s healthy, gluten free and that she will eat. All I can say was that these were a hit and very easy to make with just a few ingredients. The awesome thing about these too is that every time you make them you could add a different ingredient just to make them a bit different.
Here is what I used:
-1cup of pitted dates
-1 1/4 cup of oats
-1/4 cup of peanut butter or other type of nut butter that you like
-1/4 cup of sunflower seeds
-1/4 cup of chopped almonds
-1/4 cup of chopped pecans
-2 tbs of ground flax
-1/2 cup of dried cranberries
-1/4 tsp of vanilla extract
This was my variation of ingredients. You can do more or less of whatever you prefer but I wanted mine chock full of stuff! The cranberries in my opinion were the best part.
I soaked my dates in hot water for 10 minutes to make it easier to put them in the food processor and then grinded them into a paste.
I also chopped up the almonds and pecans in my food processor.
Next I preheated the oven to 350 degrees to toast up my oats and nuts. You totally don’t have to do this but it brings out the flavours. Toast them for 10-15 minutes.
Next heat up your nut butter. You can do it over the oven but I just did mine for 30 seconds in the mincrowave.
This is the fun part! Mix everything together in a bowl. Use a spatula. I also used my hands to make sure everything really got mixed well. Just make sure the butter portion isn’t too hot.
Next, line two loaf pans with wax paper or cake pans whatever you have on hand and put the mixture in making sure it’s pushed and flattened out. Pop in the freezer for 20 minutes.
After they have been in the freezer pull them out of the pan by the wax paper and cut into squares or rectangles with a sharp knife and voila! You have your very own homemade and delicious granola bars! I have been keeping mine cool in the fridge to avoid any crumbling. Isla loves them! Even my husband said they tasted awesome and they are a great afternoon snack for me!
